- [3 cups] Sweetened Shredded Coconut
- [5oz] Sweetened Condensed Milk
- [½ Cup] Mini Chocolate Chips
- [1 tsp] Vanilla Extract
Preparation:
- In mixer, combine all ingredients.
- Mix with paddle attachment for 1-2 minutes until well incorporated.
- Scoop with small metal ice cream scooper onto a parchment lined sheet pan.
- Bake at 300 degrees for 7-8 minutes or until light golden brown.
Notes: Do not bake too long or coconut will burn very quickly. Let cool at room temperature for 15-20 minutes.
